Recipe: Brownie Bottom Cupcakes

All you need to make these yummy browniecakes. (as I call them)

Yields about 30 cupcakes

1 box brownie mix, prepared according to packaging directions
1 box cake mix, prepared according to packaging directions
Icing of your choosing.

1- Preheat the oven to 350.
2- Fill each cupcake liner 1/3 of the way with brownie batter,
 then another 1/3 with cake batter. Repeat until all the batter is used.

3- Bake 20 minutes. Allow to cool completely, then apply your icing.

I made my own icing here is the recipe
Chocolate Icing
2 1/2 cups icing sugar
1/2 cup cocoa
6 tbsp margarine
1 tsp vanilla
add enough milk for the thickness of your icing.
Combine all together.


Recipe: Fiddle Diddle Cookies
I love making Fiddle Diddles also known as 'No Bake' Cookies. Super easy to make and satisfies the pregnancy craving for chocolate.

What you Need:

½ cup Margarine
2 cups Sugar
½ cup Milk
6 tablespoons cocoa
3 cups Quick-cooking rolled oats (not instant)
½ cup Medium coconut
1 teaspoon Vanilla

1. Melt margarine in a sauce pan, once melted add sugar and milk. Stirring often. Bring to a boil. Remove from heat.
2. Add remaining ingredients, mix well.
3. Drop rounds onto wax paper and let cool.

Super Easy Peanut Butter Cookies
PREHEAT oven to 325 F
What you need:
1 cup smooth peanut butter
1/2 cup sugar
1 egg
Blend all three ingredients together until well blended.
ROLL into 24 balls; place, 2 inches apart, on a ungreased baking sheet. Flatten with a fork.
BAKE 15 minutes (Do not overbake this is where that timer comes in handy, especially with a a toddler and pregnancy brain!)
